Healthy Apple Recipes for Rosh Hashanah (the Jewish New Year)

This Sunday night begins the Jewish holiday of Rosh Hashanah, the Jewish New Year. It’s a tradition to eat apples and honey on Rosh Hashanah as a way of wishing for a sweet new year.

In honor of the holiday, I asked some of my blogger friends to share their favorite healthy apple recipes. Even if you’re not celebrating the holiday this weekend, these recipes are all perfect for fall, when apples are in their peak season!

Peanut Butter Recipe Roundup

In honor of National Peanut Butter Day tomorrow, I am sharing a big ‘ol peanut butter recipe roundup today!  I know a bunch of you are just as obsessed with peanut butter as I am, so I figured you guys would enjoy this one.

A lot of these recipes are from waaaaaaay back when my site was just a little Tumblr blog and my photos were taken on an ancient digital camera…BUT, the recipes are still amazing and I continue to make them regularly!

Gosh, I love these PB&J Muffins. Made with whole wheat flour, these muffins are much healthier than your standard bakery muffin. And who said PB&J was just for kids? Adults go crazy for these, too!

This delicious smoothie is so simple to make and incredibly satisfying. I enjoy it first thing in the morning or as a mid-afternoon snack.

I know, I know, almond butter isn’t the same thing, but this granola is JUST as yummy if you substitute peanut butter for the almond butter!

Recipe Roundup: No-Cook Summer Recipes

With summer right around the corner, I thought I would do a recipe roundup of some delicious summer foods that do not require the oven or stove. Using either during the hot summer months can be brutal, so I try to avoid it at all costs. Below are some of my favorite no-cook summer recipes. Breakfast:

Overnight Oats

Oats are soaked overnight in the fridge in a mixture of Greek yogurt, almond milk, and chia seeds. In the morning they are ready to eat – cold!

Lunch and Dinner:

Heirloom Tomato and Burrata Panzanella Salad

This no-cook salad is one of my favorites. There is so much flavor from fresh heirloom tomatoes and creamy burrata.

Grilled Chicken Kebabs with Cilantro, Garlic, and Garam Masala

Okay, I am breaking my rule a little bit for this one because you technically have to cook these kebabs, but with a grill – not your stove. The longer they marinate, the better they get!

Appetizers and Side Dishes:

Muhammara: Roasted Red Pepper Dip

I’ve made this dip four times since I posted the original recipe. It is incredible with warm pita bread. We devour it in our house!

Carrots with Raisins and Toasted Walnuts

This side dish can be served straight from the fridge or at room temperature. It is a great dish to make ahead of time because the longer it sits, the more flavorful it becomes.

Dessert:

Healthy “Brownie Bites”

These are little bites of heaven and they require no baking! You will be shocked when you find out how few ingredients you need to make them. Bonus tip: they are gluten-free!
