I’ve been eating really well the last few weeks. Most food has been from my own kitchen, but some of it has been out with Travis, friends, and coworkers as well.
Last Friday my office celebrated the holidays by decorating the office together with a tree, lights, presents, a Menorah, and best yet….cookie decorating! I was in charge of making the cookies, so a few coworkers came over the night before and we made big batches of sugar cookies and gingerbread cookies. When I was home for Thanksgiving I made sure to grab my Mom’s old holiday cookie cutters, which really came in handy for this project!
The younger people in my office had a holiday potluck this past weekend. I have been telling my coworkers about the Oreo Stuffed Chocolate Chip Cookies I used to make back in college, and for months now they have asked me to make Since it is usually hard to get everyone in one place, I figured this was the best occasion! Needless to say, everyone loved them.
If you have never tried these, they are as delicious (and gluttonous) as they sound!
For the past few months I had been pretty hooked on protein shakes and smoothies for breakfast in the morning. Since I work out before work, they are the perfect quick and healthy breakfast. But recently, it has been really cold in the morning and the last thing I want is a freezing shake, so I have been loving steel cut oats for my weekday breakfasts. These oats take about 30 minutes to cook, so usually I make them the night before and reheat them the next morning with a splash of unsweetened almond milk. I like to top my oats with some kind of fruit and nut butter (raspberries and peanut butter below!)
As a mentioned in my last post, I am so hooked on my slow cooker now. Last week, I made this Honey Sesame Chicken in my slow cooker and ate it with carrots and onions I roasted in the oven with sesame oil, soy sauce, garlic and ginger. It was outstanding and the leftovers reheated so perfectly at work the next day. It is definitely going to be a regular in my house!
Sunday afternoon Travis and I needed to grab something quick for lunch before we picked up our most recent foster dog from the weekend adoption. This is Hub Cap (also called Harriet). She is the sweetest little dog and SO easy to take care of. She has been with the organization for a few months now (with a different foster) and we are really hoping she finds her forever home soon – she would make a family so happy this holiday season.
Before we picked her up, Travis and I decided to try a relatively new place near our apartment, Burger Lounge. I ordered a turkey burger with a side salad and Travis ordered a regular burger on a Whole Wheat bun with a side of small fries. Neither or us were expecting such awesome presentation and we were both raving about how fresh our food tasted. The corn and veggies in my salad were so flavorful and I loved that my turkey burger wasn’t dry or overly salty like most tend to be! Travis said he couldn’t believe how good (and not sluggish) he felt after eating a burger and fries. We will definitely be back here.
As you can see, A LOT of good eats lately…and only more to come as the holidays continue!
