Sun-Dried Tomato Dip

I love eating tapas-style because that way I get to try small bites of many different things. More and more restaurants are offering shared small plates instead of larger dishes, and it is always my preference to order this way, as opposed to getting my own entree. This is probably why I always look forward to snacking at the appetizer table during the holiday season – lots and lots of delicious nibbles to try. Although, I will admit, it is very hard for me to exercise self-control with such a variety in front of me, and I often fill up before the main meal. Oops.

Unfortunately, we all know that a delicious spread of cheeses, breads, crackers, and other bite-sized goodies can often be our winter-diet downfall. So many of these appetizers are calorie-heavy and high in fat. Sure, they taste mighty good, but they aren’t the healthiest option.

So when Chobani contacted me about creating a recipe for their #MadeWithChobani campaign, I knew right away I wanted to create a healthy appetizer for the holiday season. I cook and bake with greek yogurt a lot. I especially love using yogurt as a substitute for mayonnaise and sour cream in dips. You get that creamy, tangy taste without all of the unnecessary fat and calories. Plus, when you add greek yogurt to any recipe, you give it a great boost in protein!

If you like sun-dried tomatoes, you are going to love this dip. I had all the ingredients in my fridge and chances are you do, too! This recipe requires only four ingredients and comes together in under five minutes, so it is perfect if you are pinched for time!

We chowed down on this dip with baked pita chips and carrots sticks. It would also be delicious with sliced bell peppers and warm whole wheat pita. Bring this to your next holiday gathering and people will be begging you for the recipe.

Ingredients
  • ½ cup crumbled feta
  • 1 cup Chobani nonfat plain greek yogurt
  • 1 Tablespoon extra-virgin olive oil
  • ½ cup chopped sun-dried tomatoes, packed in olive oil (drained)
  • salt and pepper
Instructions
  1. In a medium bowl mash the feta crumbles. Stir in the greek yogurt, olive oil, and sun-dried tomatoes. Season with salt and pepper to taste. Serve with pita chips, veggie crudites, or warm pita bread.

Mediterranean Chicken Pita Sandwich

Ingredients
  • 4-5 oz. cooked rotisserie chicken
  • ⅛ cup diced cucumber
  • 2 Tablespoons crumbled feta
  • 2 Tablespoons roasted red pepper, diced
  • 2 Tablespoons kalamata olives, chopped (optional)
  • 2 teaspoons minced red onion
  • 1 Tablespoon fresh lemon juice, or more to taste
  • Salt and Pepper
  • ⅛ cup hummus (try my avocado hummus)
  • 2 whole wheat pitas rounds, sliced in half
Instructions
  1. In a medium bowl mix the chicken, cucumber, feta, red pepper, olives, red onion, and lemon juice. Season with salt and pepper to taste.
  2. Spread the hummus inside each pita half. Divide the chicken mixture between the four pita halves and serve with additional hummus and cucumber slices.

Last week, I was scrounging through the fridge looking for an afternoon snack, but quickly realized my options were limited. We were going away for the weekend, so we had very few groceries left in our fridge (I always try to use up anything I can before I go away because I hate waste).

Seeing as how we didn’t have any of my go-to snacks (Greek yogurt, fruit, hummus, etc.),  I knew I was going to have to get creative. I pulled out the ONE vegetable we had left, a cucumber, and started messing around. Let’s be honest, cucumbers are pretty darn boring on their own because they’re basically all water. I knew I needed to add something to make these cukes exciting enough to please my taste buds.

I remembered the yummy cucumber salad from our favorite deli in Philadelphia, the Famous 4th Street Delicatessen, and set out to recreate the tasty vinaigrette they use. (Side note: If you are ever in Philly and you love deli food, you MUST go to 4th Street Deli. The sandwiches are double the size of your head and the quality of the food is A+++).

I whisked together a basic dressing of red wine vinegar, olive oil, sugar, salt and pepper and drizzled it on the sliced cucumber spears. Then I sprinkled feta crumbles and finely chopped dill on top of the spears for an extra punch. The result was a delicious mid-day cucumber salad! The cucumber soaks up the flavor from the vinegar and the feta gives the cucumber a delicious taste that will remind you of a fresh Greek salad.

Cucumber Salad with Feta and Dill

Ingredients
  • 1 large cucumber, cut crosswise and then cut into quarters, lengthwise
  • 1 Tablespoon red wine vinegar
  • 1 teaspoon extra-virgin olive oil
  • ¼ teaspoon sugar
  • pinch of salt and pepper
  • ⅛ cup feta cheese, crumbled (about ½ oz)
  • 2 teaspoons finely chopped fresh dill (or ½ teaspoon dried)
Instructions
  1. Place the sliced cucumber spears in a shallow dish. In a small bowl, whisk together the red wine vinegar, extra-virgin olive oil, sugar, salt, and pepper. Drizzle the vinegar mixture over the cucumbers. Sprinkle with the feta and dill. Serve immediately.
Notes
I recommend eating this snack right away because I found the cucumbers become a bit soggy if left out for awhile.

If you follow me on Instagram, you may have noticed that I am on a serious salad kick recently. I used to hate making salads at home because I never felt like they were as good as when I ordered them out at one of those “make-your-own-salad bars.” I realized that this was because I never had all of the delicious mix-ins salad bars offered. Now when I go grocery shopping, I take these little items into account, always making sure to throw a couple in my basket. In order to keep myself from getting bored, I try to change up the ingredients on a regular basis – different nuts, cheeses, veggies, lettuce, etc. I also always make sure my salad has a good dose of protein, fiber, and usually a healthy fat, so it holds me over until my next meal.

This Chicken Salad with Lemon Vinaigrette is packed with fresh and bold flavors, which will make your taste buds very happy. I love bringing leftovers for lunch at work the next day. If you pack your salads to go, I recommend you put your salad dressing in a separate small container, so it isn’t soggy by noon. Soggy salad = the worst.

Healthy Chicken Salad with Lemon Vinaigrette

Ingredients
Salad:
  • 6 oz spring mix lettuce
  • ¼ cup roasted red peppers, chopped
  • ¼ cup sundried tomatoes, chopped
  • 6-8 oz grilled chicken breast, sliced into ½ inch strips
  • 2 oz feta
  • 2 Tablespoons toasted pine nuts*
Lemon Vinaigrette:
  • ½ cup olive oil
  • 2 Tablespoons fresh lemon juice
  • ½ teaspoon grated lemon rind
  • 1 Tablespoon shallot, minced
  • 1.5 teaspoons dijon
  • 1 teaspoon agave
  • salt and pepper to taste
Instructions
  1. To prepare the salad, place the lettuce at the bottom of two large bowls. Then divide the roasted red peppers, sundried tomatoes and grilled chicken between the two bowls. Sprinkle both with the feta and pine nuts.
  2. To prepare the lemon vinaigrette, mix all ingredients in a small bowl or salad dressing shaker. Sprinkle lightly over each salad. Store the remaining dressing in the fridge for up to three days.
Notes
To toast pine nuts, turn a small skillet to medium-high heat. Place the pine nuts in the pan and stir constantly for 2-3 minutes until lightly browned. You will be able to smell the pine nuts as they are toasting. Make sure to watch them the entire time because pine nuts burn very quickly.
