Sriracha Roasted Broccoli

Hey, hey Wednesday people!¬†I’ve finally mastered this Sriracha Roasted Broccoli recipe and I can’t wait to share it with you today!

Travis and I first had a similar recipe on a seasonal menu at one of our favorite local restaurants, The Misfit, in Santa Monica. (Not sure I’ve mentioned them enough on the blog ūüėČ )

We both¬†loved their spicy charred broccoli after one bite! Admittedly, their version was a tad too spicy for me, so I’ve toned down the heat in this version. If you like your food¬†extra hot, feel free to up the sriracha in the recipe.

We paired this roasted broccoli with Honey-Soy Glazed Chicken made in the slow cooker, but it would be great alongside fish or tofu as well.

Sriracha-Roasted Broccoli

Serves: 2-3
Ingredients
  • 1.5 Tablespoons extra‚Äďvirgin olive oil
  • 2 Tablespoons sriracha
  • 1 Tablespoon low-sodium soy sauce
  • ½ teaspoon toasted sesame oil
  • 1 teaspoon honey
  • 3 cloves garlic, thinly sliced
  • 1 lb. broccoli crowns and peeled stems
Instructions
  1. Preheat the oven to 425¬į. In a large bowl, whisk together the extra-virgin olive oil, sriracha, soy sauce, sesame oil, honey and garlic. Add the broccoli to the bowl and toss to coat.
  2. Spread the broccoli mixture in an even layer on a baking sheet lined with parchment paper.
  3. Roast for 10 minutes, then remove from oven, flip and turn on the broiler. Broil the broccoli for 4-5 minutes more, until the edges are crisp.

Asian-Glazed Salmon Recipe

I’ve tried countless salmon recipes and this one is without a doubt my favorite. You may have seen my sneak-peak post on Instagram last week, and I am excited to share the recipe for this Asian-Glazed Salmon with you today!

I always have the ingredients for this recipe in my fridge, which is another reason why I love this dish so much. From start to finish, this Asian-Glazed Salmon¬†takes no more than 30 minutes — a weeknight win in my book!

We always pair this salmon with a side of broccoli or green beans. I think it would also be delicious with black rice or sauteed spinach.

Asian-Glazed Salmon Recipe

Ingredients
  • ⅛ cup +2 Tablespoons low-sodium soy sauce
  • ⅛ cup brown sugar
  • 1 Tablespoon hoisin sauce
  • 1 Tablespoon fresh ginger, grated
  • 1 small clove garlic, minced
  • ⅛ teaspoon dried red pepper flakes
  • ½ Tablespoon fresh lime juice
  • 2 (6-ounce) salmon fillets
  • Sesame seeds (optional)
Instructions
  1. Place the soy sauce, brown sugar, hoisin sauce, ginger, red pepper flakes, and garlic in a medium small saucepan. Bring the mixture to a boil, reduce the heat to medium-low, and cook for 10 minutes, or until the sauce forms a glaze. Stir the mixture regularly to ensure that it doesn't burn. Remove from heat and stir in the lime juice. Set aside.
  2. Preheat the oven to 400 degrees.
  3. Place the salmon fillets, skin side down, on a broiler pan or a wire baking rack (on top of a baking sheet), coated with cooking spray. Baste the salmon with some of the glaze and let it sit for 15 minutes. Brush a bit more glaze on each salmon fillet and sprinkle with sesame seeds (optional).
  4. Place in the oven to bake for 6-8 minutes. Then, turn the oven to the BROIL setting and broil the salmon on the top rack until cooked through, about 2 minutes. Remove from oven and brush with more glaze (if desired). Allow to cool for 2 minutes and serve.

Sunday night’s dinner came together very quickly, which was exactly what I was hoping for.

So by 5PM on Sunday night, all I wanted was food, food, and FOOD.

I was getting seriously hangry (definition: a state of severe hunger that leads to anger). AKA: Avoid me at all costs.

Travis and I were going to make a big batch of our beloved Turkey Meatballs, but I was even too impatient to let those simmer. So instead, we took an old Asian Turkey Burger recipe and adapted it to make little meatballs.

And a little dipping sauce to go along with them.

This dish would be a great appetizer to serve at a dinner party as your guests sip on a cold beer or glass of wine.

For me, it was perfectly satisfying for dinner – especially considering it all came together in under 30 minutes.

 

Asian Turkey Meatballs with Sesame-Soy Dipping Sauce
 
Ingredients
Asian Turkey Meatballs
  • 1 lb. white ground turkey
  • ¼ cup fresh cilantro, chopped
  • 1 Tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 egg
  • ¼ cup whole wheat breadcrumbs (I used Ian's Whole Wheat Panko)
  • 2 scallions, chopped
  • 1 Tablespoon sriracha
  • 1 Tablespoon low sodium soy sauce
  • 2 teaspoons sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes (optional for more spice)
Sesame-Soy Dipping Sauce
  • 4 Tablespoons low sodium soy sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons lime juice
  • 2 tablespoons water
  • 2 tablespoons chopped fresh scallion
  • ½ teaspoon sesame seeds (optional)
Instructions
  1. Preheat oven to 500 degrees F. Spray a nonstick baking sheet with cooking spray.
  2. Mix all ingredients in a large bowl until well combined. Form the meatballs into 12 balls and place on the baking sheet. Bake for 14-15 minutes on the middle rack of the oven. Remove the baking sheet from the oven and immediately remove the meatballs from the baking sheet onto a different plate or platter to prevent them from overcooking
  3. Serve hot with the dipping sauce (recipe below)
  4. To make the dipping sauce, in a small bowl whisk together the soy sauce through the water. Sprinkle with the scallions and the sesame seeds.
