This Week’s Meal Plan 11/7/16

Hi friends, happy Monday!

Did you enjoy your extra hour of sleep over the weekend? As nice as I thought it was on Sunday morning, I was super bummed when I looked out the window last night at 5PM and saw that it was dark already. Wah! Where did all the daylight goooo!?

Since I’m now in total fall mode (despite it being 80 degrees in Santa Monica tomorrow…), I’ve got lots of cozy dinners planned this week. We just did a small grocery shop over the weekend because we’re headed to New Jersey this weekend for a wedding, so we tried not to buy too much.

Here’s what’s on our meal plan this week:

Saturday: Healthy Turkey Chili (an old recipe that I finally got around to rephotographing this weekend!)

Sunday: Persian Chicken Stew

Monday: Salads with Roasted Carrots, Farro and Grilled Chicken

Tuesday: Barramundi with Lemon-Butter Sauce and Sautéed Spinach

Wednesday: Pea Soup with Mint and Feta

Thursday: Leftovers / Use what’s in the fridge

Friday: Away for Meredith and Eric’s wedding!

All I needed was the cherries, and since they're not in season right now, @sealtheseasons frozen cherries were perfect for this recipe. I LOVE that these cherries are from local New York farms. 👨🏽‍🌾👩🏼‍🌾

Recipe: Healthier Cherry Cobbler for Two🍒
.
- Filling Ingredients -
1 cup @sealtheseasons frozen cherries, thawed slightly
1/8 cup coconut or brown sugar
3/4 teaspoon cornstarch
1/2 teaspoon lemon juice
1/8 teaspoon freshly grated ginger
Pinch lemon zest
Pinch salt
.
- Topping Ingredients -
1/8 cup oats + 2 Tablespoons, divided
2 Tablespoons whole wheat flour
1 Tablespoon coconut or brown sugar
Pinch salt
1.5 Tablespoons chilled unsalted butter
.
- Instructions -
1. Preheat oven to 400 degrees F.
2. In a small oven-safe ramekin, combine the filling ingredients. Set aside.
3. In a mini food processor, pulse together 1/8 cup oats and the rest of the topping ingredients for about 5 seconds. Stir in the remaining 2 Tablespoons of oats and pinch the topping together with fingers for 30 seconds. If it still feels dry and loose, then add a bit more butter.
4. Sprinkle the topping over the cherry mixture. Bake for 30 minutes, until the cherries are bubbling and the topping is light brown and crisp. Cool the ramekin on a wire rack for 10 minutes and serve warm with vanilla ice cream (optional).
