Planning my 2016 Goals and Resolutions

January 4, 2016 2 Comments

Print Friendly, PDF & Email

Happy 2016!

I hope you guys had a great night on NYE whether you went out or stayed in. We spent NYE at our friend’s house, celebrating with delicious food and, of course, plenty of champagne.

Travis and I kept things pretty low-key during the day on January 1st.

Bessie Sleeping

Keeping with our recent New Year’s Day tradition, we got brunch at one of our favorite local restaurants, The Misfit. There may or may not have been mimosas involved.. and it was just as delicious as always.

After that we came home, relaxed, ordered take-out from Canter’s Deli (both Travis and my favorite “treat meal”) and watched a movie on the couch with Bessie. It was a perfect day off of work, indeed.

Canter's Deli Pastrami Sandwich

As I look ahead to 2016, there is so much I want to do and accomplish. For the first time since high school I decided to buy a paper planner. I consider myself a very organized person, and for the last 8-ish years I’ve really just used iCal on my computer and iPhone to make sure I stay on top of upcoming events, deadlines, bills, etc.

It’s worked really well, but one thing I haven’t been good about is accomplishing long-term to-dos that I think about, but never jot down.

Paper Planner - 2016 Goals

I am excited to use this paper planner to keep track of yearly goals whether it be fitness-related, for Little Chef Big Appetite, financial, etc. Over the weekend, I spent some time jotting down notes for January and I already feel so excited about the coming month (and the months to follow).

I am definitely someone who gets really happy when I get to physically cross something off a to-do list (tell me I am not the only one!), so my hope is that by writing down all of these goals, I will stick to them better than I would if they were listed in my phone.

Happy New Year!!! Pretty planner! 2 weeks ago, I bought one too – also for the first time in a long time (probably since college–I did use a paper planner in college!) to get ahold of all the things going on that require major advanced planning and checklists. One thing on the calendar? VISITING YOU! 🙂 🙂 🙂 🙂

    Cheers to you and Travis

  • CONFESSION: I’m a bit of a neat freak. I love organizing and order. I can’t focus if my work area is a mess and it stresses me out to fall asleep or wake up to a messy bedroom. 🤦🏼‍♀️🛏🚪🛋
.
So it should be no surprise that I love to keep my kitchen nice and tidy - especially since I’m cooking in it EVERY day!🍽🥣
.
Today on the blog I’m sharing how I keep my kitchen tidy AND some of my favorite kitchen organization products.🗑🗳📚

  • Happy Valentine's Day!❤️
This healthier Cherry Cobbler for Two is perfect for dessert tonight. The best part? You probably have most of the ingredients already! #ad
.
All I needed was the cherries, and since they're not in season right now, @sealtheseasons frozen cherries were perfect for this recipe. I LOVE that these cherries are from local New York farms. 👨🏽‍🌾👩🏼‍🌾
.
@sealtheseasons works with local farmers in the United States to freeze their produce and make it available to consumers all year long. I always have frozen fruit on hand because it can be used in SO MANY ways! 🍒
.
You can find @sealtheseasons at @wholefoods, @shopritestores and coming soon to select NYC stores! 🛍🛒
.
Recipe: Healthier Cherry Cobbler for Two🍒
.
- Filling Ingredients -
1 cup @sealtheseasons frozen cherries, thawed slightly
1/8 cup coconut or brown sugar
3/4 teaspoon cornstarch
1/2 teaspoon lemon juice
1/8 teaspoon freshly grated ginger
Pinch lemon zest
Pinch salt
.
- Topping Ingredients -
1/8 cup oats + 2 Tablespoons, divided
2 Tablespoons whole wheat flour
1 Tablespoon coconut or brown sugar
Pinch salt
1.5 Tablespoons chilled unsalted butter
.
- Instructions -
1. Preheat oven to 400 degrees F.
2. In a small oven-safe ramekin, combine the filling ingredients. Set aside.
3. In a mini food processor, pulse together 1/8 cup oats and the rest of the topping ingredients for about 5 seconds. Stir in the remaining 2 Tablespoons of oats and pinch the topping together with fingers for 30 seconds. If it still feels dry and loose, then add a bit more butter.
4. Sprinkle the topping over the cherry mixture. Bake for 30 minutes, until the cherries are bubbling and the topping is light brown and crisp. Cool the ramekin on a wire rack for 10 minutes and serve warm with vanilla ice cream (optional).

  • NEW recipe on the blog just in time for Valentine's Day!! 💗
.
This Pesto Spaghetti with Blistered Tomatoes and Roasted Garlic is the perfect recipe for a date night at home. I am all about staying home on Valentine's Day, and this meal is SUPER easy to make (even for the most novice cook, I promise!) 🍝
.
I made this recipe in collaboration with @pepperhome, a home accessories company started by two of my friends! Full transparency: this post is not sponsored. I just love Pepper products SO much and was so excited to share them with you.
.
@pepperhome is all about fun patterns to spice up any room, and I just love their table linens!
If your space is white, gray, or neutral, @pepperhome pillows, throws, and placemats are such an easy way to brighten up your space. I give you lots more detail on why I love Pepper in the blog post, so click the link in my bio to read it!

  • Making my Weeknight Sesame Chicken Stir Fry for dinner tonight and so pumped! Haven’t made it since I posted the recipe to the blog in November, so it’s been WAY too long!
.
Those of you who have tried it have given the recipe rave reviews and I LOVE hearing that!
.
TWO reasons why I love this recipe:
- It is ready in 25 min!
- I use ground chicken (or turkey) so no chopping up raw chicken required! Saves you time and well, raw chicken is just bleh!
