I love cherries in the summer. They’re best between May and August, so I take full advantage during the summer months and buy them almost weekly. While delicious just for snacking, cherries are incredibly versatile and can be used in many different dishes, both savory and sweet. This Farro Salad with Cherries and Walnuts remains one of my all-time favorite summer recipes. If you haven’t tried it yet, I highly recommend you do!
Pro tip: when selecting the perfect bunch of cherries, look for the ones with shiny skin and green stems still attached. They’re the best.
This spinach salad has all of the necessary elements: sweetness from the cherries and blueberries, a bit of tang from the goat cheese and lemon vinaigrette, and a delicious crunch from the pistachios. Serve it alongside grilled chicken or fish for a healthy summer dinner.
