Ingredients
  • 1/2 cup (one stick) unsalted butter, melted
  • 1 cup brown sugar (unpacked) or coconut sugar*
  • 1 egg room temperature
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cup rolled oats blended in a food processor or blender to a fine powder
  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 cup dark chocolate chips**
  • Coarse sea salt for sprinkling
Instructions
  1. Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl beat together the sugar and butter for about 3 minutes. Beat in the egg and the vanilla until well combined.
  3. In a medium bowl whisk together the blended oats, white whole wheat flour, baking powder, salt, and baking soda. Gradually stir the dry ingredients into the wet ingredients until well incorporated. Fold in the chocolate chips.

  4. Scoop the dough into 1/8 cup sized balls and place on a baking sheet, leaving at least 2 inches between cookies. Sprinkle each cookie with a pinch of sea salt and bake for 8-10 minutes.
  5. Remove the cookies from the oven and let them rest on the baking sheet for 2 minutes. Then remove to a wire rack to cool completely.
Notes

* Coconut Sugar is a great unrefined substitute for brown sugar
** Semi-sweet chocolate chips will also work
