These No Bake Peanut Butter Trail Mix Bites are perfect for travel, hikes, bike rides and mid-day snacks. Gluten-Free, Dairy-Free and Vegan Optional.

  • 1/3 cups unsalted almonds*
  • 1/3 cup unsalted cashews*
  • 1 Tablespoon flax seeds (optional)
  • 1/2 cup rolled oats
  • 2 Tablespoons dark chocolate chips
  • 1/3 cup peanut butter (or almond butter)
  • 3 Tablespoons honey** or maple syrup, plus more to taste
  • 1 teaspoon vanilla extract
  • 2 dried pitted dates, chopped
  • 1/8 cups golden raisins
  • salt, to taste
  1. In a food processor, grind the almonds, cashews, and flax seeds for 5 seconds. Add the rolled oats and chocolate chips to the bowl of the food processor and pulse again for another 5 seconds. Do not grind finely, there should still be some chunks of nuts and oats.

  2. In a large bowl combine the peanut butter, honey/maple syrup, and vanilla. Microwave for about 15 seconds, until the peanut butter is melty. Add the nut and oat mixture from the food processor into the large bowl with the peanut butter, and stir to combine. Fold in the dates and golden raisins.

  3. Using wet hands, roll the mixture into 12 balls (slightly smaller than the size of a golf ball) and place on a large plate or cutting board. Make sure to pack the mixture tightly. Place the trail mix bites in the fridge for at least one hour to harden, then enjoy. They should last for about one week in the fridge.


*If using salted nuts and/or peanut butter, I do not recommend adding salt at the end.

**To make this recipe vegan, use maple syrup instead of honey.
